This is a great Gluten Free summer recipe. My latest love is to make this with Red Quinoa.....delicious! Give it a try!
2 cups water
1 cup quinoa (rinsed)
1 pinch salt
1/4 cup olive oil
1/2 tsp sea salt
1/4 cup lemon juice
3 tomatoes, diced
1 cup fresh parsley, chopped
1 cucumber, diced
2 bunches green onions, chopped
2 grated carrots (optional)
Boil water. Add 1 cup of rinsed quinoa and salt and simmer for 15 minutes. Cool to room temperature. Combine rest of ingredients and stir into cooled quinoa. Enjoy!
