Gluten Free Valentine's Day Cream Puffs

Valentine's Day Cream Puffs

These are surprisingly simple to make (and I do mean really easy!) and would make a lovely Valentine's dessert for your gluten-free Valentine.  Make your own whipped cream or purchase some pre-made.

  • 1/2 cup water                          
  • 1/4 cup butter
  • 1/4 tsp vanilla
  • 1/8 tsp salt   
  • 7 Tbsp rice flour (brown or white)
  • 2 eggs

In a medium saucepan bring water, butter, vanilla and salt to a boil over medium high heat.  Whisk in flour all at once and stir until mixture is smooth and forms a ball.  Remove from heat and cool for 5 minutes.  Add eggs one at a time.  Mix batter until smooth.  Pour into a well greased muffin tin or place 6 large dollops on a greased cookie sheet.  Bake at 400 F for 30–35 minutes until golden brown and crisp.  Makes exactly 6.

When cool, slice in half and fill with whipped cream and garnish with berries.  If you prefer a more professional look, make a small hole and pipe the whipped cream into the middle.  If desired, dust with icing sugar or drizzle with chocolate.
